Grape Tomato, Basil, and Ricotta Flatbread Pizza with Arugula Salad

What is it about pizza that makes it so unanimously loved? It can’t be the dough, as different cultures make wildly different doughs. Or even the ingredients, there’s so much variety out there!

Maybe it’s the way the flavours all come together – regardless of the way it’s prepared or its ingredients – that appeals to pizza lovers everywhere. Whatever the reason, this Tomato, Basil and Ricotta Naan Pizza is one of our very favourite ways to make a delicious homemade pizza in only 30 minutes!

Ingredients:

½ (5 oz | 142 g) pkg baby arugula
2 flatbreads or naan
½ small pkg fresh basil
3 cloves garlic
½ pint | small pkg grape tomatoes
¼ (8 oz | 227 g) block mozzarella cheese
¼ (15 oz | 425 g) pkg ricotta cheese

-- extra virgin olive oil

Instructions:

    Preheat oven to 400°F (200°C) and position rack in the center.

    Peel and mince garlic. In a small bowl, mix together garlic, oil, salt, and pepper.

    Wash and halve tomatoes.

    ½ pint | small pkg grape tomatoes

    Grate ½ cup of mozzarella. Measure out ¼ cup of ricotta.

    ¼ (8 oz | 227 g) block mozzarella cheese ¼ (15 oz | 425 g) pkg ricotta cheese

    Place flatbreads on a flat surface. Spoon oil and garlic mixture over top, sprinkle with mozzarella and tomatoes, and finish off with spoonfuls of ricotta.

    Place in the oven, directly on the rack, and bake until cheese melts, 8-10 minutes. Then broil for 1-2 minutes.

    Wash and dry arugula and basil. Pick basil leaves off the stems; discard the stems and thinly slice the leaves into ribbons.

    In a small bowl, prepare salad dressing by whisking together olive oil, vinegar, dijon, salt, and pepper.

    1 ½ tbsp extra virgin olive oil ½ tbsp balsamic vinegar ⅛ tsp dijon mustard 1 pinch salt 1 pinch black pepper

    Remove pizzas from oven. Garnish with basil and slice into wedges.

    To serve, place pizza on a plate and have salad on the side. Enjoy!
